Q. Do you have any pointers for smoking and drying chillies?
A. Halve chillies before smoking to make sure there is a damp surface area to take in the smoke flavour. Used a ProQ smoker or similar.
Just dehydrate afterwards either in a coldish oven or a dehydrater and grind up afterwards if required.
